This may not quite fit the bill, as the main character isn't an animal per se, but Franz Kafka's "Metamorphosis" is a favorite. Definitely an adult book with a twisted sense of humor.
Some may get the 'heebie-jeebies' on this one ......;-)...I think it's a keeper....Kafka's 'The Metamorphosis'......A fellow who 'turns' into an insect. Kafka's imagination runs wild here!
Rita Mae Brown's Mrs Murphy mysteries, supposedly co-written with her cat, Sneaky Pie. While not great literature, they're fun, and feature 2 cats and a dog who "help" solve the mysteries. The animals often go off on their own to 'investigate' and will talk to each other about how "Gosh, if mom would just get on the floor and use her nose, she'd realize what was going on here!"
For some reason over the last week or so I have been trying to think of books for adults where animals are the main characters. I have been shocked to realize how few I can think of and I am hoping the C-D community can help me ientify sme more. I can think of many for young adults or kids (Rats of NiMH, a great book, the Incredible Journey, Jonathan Livingston Seagull, etc.) and books where animals are central but not really the main characters (Black Beauty, Old Yeller, etc. although those probably fall into both categories). So I have been able to come up with TWO books that I would call adult fiction in which animals are the central protagonists - Watership Down by Richard Adams and Animal Farm by George Orwell, although arguably in boh cases the animals represent metaphors for the human condition. I am convinced I am forgetting some major novels, and if I am not forgetting them but have simply not read or heard of them, I would be very interested in the references.

"Gregor the Overlander" is the first in a series by Suzanne Collins (she wrote "The Hunger Games"). It is a YA series, but every adult I've recommended it to has loved it and thought it was better than "The Hunger Games" trilogy, which just got more attention.
Bambie-A life in the woods by Felix Salten is an excellent book.
If you like Fantasy Mercedes Lackey has horses as central characters in almost of her Valdemar books.
The Dragons of Pern in Ann McAffery's books are wonderful too.
Tailchaser's Song is similar to Watership Down only with cats.
The Secret of N.I.M.H is a very good book that features mice and rats as the main characters.
The Heavenly Horse from the outermost west, and its sequel Piper at the gate, are good reads if you can find them and feature horses as the main characters.
