"Fried Chicken that is worth a road trip"... That is the name of an article I noticed in "The Week" a national news magazine. It listed Lucy's Fried Chicken as "Austin's hottest new picnic-style joint".

It referenced this article At Lucy's in South Austin, the bird is the word where Matthew Odam says:
Quote:
Cajun and Gulf flavors populate the menu, but the undeniable star of the show at Lucy's is the fried chicken. A buttermilk brine penetrates the chicken for 24 hours, giving it a mild tartness. Fried to a rust-colored perfection, the knobby skin enshrines tangy, buttery meat made salty from a dash of soy sauce and piqued by cayenne and paprika.
Sounds delicious, I've gotta go try some soon. The restaurant is located at 2218 College Ave. which is just West of Congress Avenue & Oltorf.

I wouldn't CHOOSE buttermilk brine...but I wouldn't kick it off the plate, either! I grew up on AP flour, salt, pepper...fried in a cast iron skillet(probably in Crisco)...no brine at all.

I'll admit that lunch today was a chicken breast and green beans at Bush's. VERY dependable fried chicken, IMO...nothing fancy. Breading might be a little heavy for some, but it'll do .

Sounds like a road trip!

I am not fond of Bush's, I tried them when our local KFC closed. I'm currently of the opinion that nothing beats KFC. But I'm looking forward to trying Lucy's.

I use a buttermilk/Shiner bock brine for my chicken (one that was originally designed for catfish). Works well. Nothing is as good as my Mamma's, but I couldn't replicate hers standing in her kitchen using her equipment, her supplies, her 30-year-old grease, with her standing right there next to me making sure I did it right, so I do what I can!

I've always been a KFC stalwart, but we've started grabbing a box of Bush's tenders and some gravy on occasion when neither of us is up to cooking (which is seldom). Not bad!

I'll have to try Lucy's, though. Sounds nummy!

That's pretty much how they do it at Stroud's, in Kansas City, Mo., est. 1933. Best chicken dinner I ever ate.* Peeking in the kitchen you can see the long rows of individual cast iron skillets they use to cook the dinners in. They have more than a dozen going at one time when they're busy.

Best of all is their motto, proudly adorning the staff t-shirts, that hearkens back to their Depression era beginnings, when live chickens were kept in cages out back until somebody placed an order:

"We choke our own chickens!"

Calvin Trillin was so taken by the food there he wrote a 7 page article on it for Gourmet magazine.

Now that we've got multiple reliable sources for top-shelf BBQ, I'd like to see someone here in Austin take up the cause of producing top-shelf fried chicken.

Here's the "secret recipe" Stroud's uses, which they've never kept secret, to get someone started on the quest:

Kansas City restaurant reveals method for perfect fried chicken » Lifestyles » The Joplin Globe, Joplin, MO

Welcome to Stroud's

*KFC is not even on the same page. I mean, seriously!

I've been to Lucy's four times and it is great. You must start with the diablo oysters....bbq'd oysters with bacon, parm, butter, and a slice of habanero. Some people may find the chicken a bit salty but I think it's pretty great since it is heavily seasoned. I can't stand Bush's chicken since it doesn't taste like anything other than fried flour.

I'm partial to the chicken at Ms. P's Electric (word that rhymes with "lock" or "dock" or "fock") on S Congress. Got the t-shirt last December when I was eating my way through town.

We did take the nephews to Top Notch three summers ago...I was there specifically for the fried chicken...DW and the twins got burgers. That chicken was more like the fare I remember from childhood in South Carolina. Worth a try for those 'exploring' the fried chickens haunts around town.

Somebody lost me when they said 'oysters'.

Bush's chicken pieces are quite different from their tenders, IMO. Same breading all 'round, but the bones add flavor, donchaknow . The tenders are a bit 'one-note', especially if you don't go for the gravy. The breasts are consistently the largest I've seen in a fried chicken joint. Wings are pretty tasty, too.

Shame is...I'm 'trying' to cut w-a-y back on refined white flour and that's hard to do when those tasty chicken parts and rolls keep a callin' !

I've spent many a dollar at KFC over the past 40 years . It is what it is...as they say. Still might have the best potato wedges and cole slaw of any fast-food place I've been. I've managed to cut back considerably on the original chicken...just glad there's not one TOO close to Avery Ranch!

That's my 2nd favorite in town after Lucy's. It's really good too.
