This visit was made to conduct a routine food safety evaluation. I observed very good handwashing by the staff and they did a great job of answering my questions about the employee health policy. Please note the following issue - The food workers should be using the thin diameter food thermometer to take temperatures of the foods that they are reheating and holding hot as a majority of the foods are thin cuts and the thick stemmed thermometer they are currently using does not give accurate readings Note: the lighting intensity in the walk in refrigerator was OK at the time of this visit and was measured above 10 foot candles. *Repeat Observations are Subject to Civil Penalty
- Food Temp Meas Device with Small-Diameter Probe, when Required
Observation: The Person in Charge has a thin diameter food thermometer but it is not being used by the food employees. Employees are using a thick stemmed thermometer which does not give accurate temperatures of the thin foods that are prepared. The thermometer being used gave a reading that was approximately 20°F lower than the actual temperature.
Correction: A small diameter metal-stemmed probe food thermometer shall be provided and readily accessible to accurately measure the temperature of thin foods such as meat patties and fish filets. Please use the thin diameter food thermometers as most of the foods prepared on site are thin and a thick stemmed thermometer does not give accurate readings.
- Controlling Pests by Routine Inspection of Premises
Observation: Observed rodent droppings on the floor below the ovens in the kitchen.
Correction: Insects and other pests are capable of transmitting disease to people by contaminating food and food-contact surfaces. Routinely inspect the premises to control the presence of pests on the premises. Please clean these areas beneath the ovens more regularly and see if there are new droppings. I was unable to determine whether the droppings were new or old. If you observe new droppings please take appropriate measures to address them and have the pest management company make more frequent visits.

This visit was made to conduct a routine inspection. Please note the following items: 1) Great hand washing observed by staff! Keep up the good work. 2) Additional lighting is needed in the walk-in cooler. Please increase lighting to at or above 10 foot candles throughout the walk-in. 3) Good holding and reheating temperatures observed.

Observation: Observed that inadequate lighting was provided in the walk-in refrigerators, walk-in freezers, and/or dry storage areas. (walk-in cooler was observed at less than 10 foot candles of light.)
Correction: Increase the lighting to provide a minimum of 10 foot candles at a distance of 30 inches off of the floor in these areas. (Recommend putting in a brighter light bulb or add an additional light).

Repair the floor in the kitchen before the next school year
- Package Integrity & No Dented Cans/ Specifications for Receiving (corrected on site)
Observation: Food from damaged packaging offered for sale or service. One badly dented can of mixed fruit was observed in the dry storage area. The canned good was removed during the inspection.
Correction: Discard or return food products once the packaging is damaged or is in bad condition. Food packages must be in good condition to protect the integrity of the contents so that food is not exposed to adulteration or potential contaminants.
- Food Storage / Preventing Contamination (corrected on site)
Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. The bottled water was improperly stored on top of a milk crate in the walk-in refrigerator. The bottled water was relocated during the inspection.
Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
- Equipment / Non-food Contact / Visibly Clean
Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: the exterior of the milk crates and the dunnage racks in the walk-in refrigerator.
Correction: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
- Refuse Container with Cover/ Women's & Unisex Toilet Room
Observation: There is no cover to the feminine napkin refuse container in the ladies room stall.
Correction: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
- Hand Drying Provision / Individual, Disposable Towels
Observation: Observed that paper towels were not provided at the kitchen handwashing sink. Paper towels were provided during the inspection.
Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing.
- Physical Facilities Good Repair (repeated violation)
Observation: Observed that the floor tiles are not maintained in good repair under the Victory refrigerator and warmer. Repair the floor before next school year.
Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
