  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed the front reach-in cooler was over 41 degrees and the frosty mix in the hopper was over 41 degrees.
    Correction: Maintenance on site, fixed the reach-in cooler. Keep an eye on the hopper, may need to stir the mixture occasionally to keep it below 41 degrees from the top to bottom.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: Observed the grinder and tomato slicer soiled. Also observed mold build-up inside the ice machine.
    Correction: Clean equipment thoroughly after each use. Empty out ice machine and clean/sanitize the inside.

There was less ice build-up in thew walk-in freezer, and the salad reach-in was leaking less but not fixed completely.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The Walk-in freezer is icing and there is a large amount of ice build up in there. The salad cooler under the drive thru prep station is leaking water.
    Correction: This problem needs to be addressed and fixed. (seal the leak, or make sure the door is staying latched during the day, and make sure the gasket is creating a tight seal). Have this leak fixed, the catch pan was full of water.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Several refrigerations units have torn/ripped gaskets or gaskets that are not sealed on properly and are loose. (Salad coolers, Walk-in refrigerator, Walk-in freezer)
    Correction: Replace gaskets and make sure they are properly attached.
  • Non-Food Contact Surfaces (repeated violation)
    Observation: The back of the fryers are in need of cleaning.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed (repeated violation)
    Observation: Observed several areas throughout the kitchen where the grout on the floor is becoming very worn or is almost gone completely.
    Correction: Have these areas repaired so that the floor remains a smooth easily cleanable surface.

    Correction: Provide a working thermometer for each refrigeration unit.

Get maintenance to fix walk-in freezer and side salad fridge leaks, and monitor ice build up in walk-in freezer (Clean routinely). Make sure all food in walk-in freezer is off the ground and not getting dripped on. Good hand washing and glove use observed. All food that is out on the make lines is on time control.
