    Observation: Some food items on ice cold holding at improper temperatures
    Correction: Maintain ice bins used for cold holding potentially hazardous foods so that the food product maintain 41°F or below.

    Observation: Beverage Air refrigerator unit at the bar was observed out of adjustment.
    Correction: Repair the refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors and walls mostly underneath or behind equipment noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The silver bullet data logger for the walk-in temperatures does not work with the current computer, but will be resolved on December 27th. The data logger is still recording, just can not be up loaded for review.
  • Critical: Hands - When to Wash* (corrected on site)
    Observation: Dish washer failed to change gloves and wash hands after handling dirty dishes and before handling clean dishes.
    Correction: Work with dish washing staff so they know when to wash hands.
