- Defrost the Artic Air freezer and the Turbo Air refrigerator on the front line

    Observation: Pizza for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
  • Single-Service and Single-Use Articles, Use Limitation
    Observation: Single-service items (cups and lids)were observed reused for the storage of beverages.
    Correction: Discontinue the reuse of single-use containers for beverages storage.
  • Plumbing System Maintained in Good Repair
    Observation: Faucet screens in poor repair.
    Correction: Repair and maintain all plumbing components and fixtures.

    Observation: Turbo Air glass door refrigerator observed in need of defrosting. Icing reahed thermostat probe causing the refrigerator to not operate properly.
    Correction: Repair the Turbo Air glass door refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

-Thermometer calibrated at the time of inspection. Suggest a digital thermometer due to the length of time the dial type takes to receive a proper reading. (The quicker, the more likely it will be used.)
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Pizza and hot dogs hot holding at improper temperatures.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
