| - Discussed using time as a public health control on lettuce, cheese, and sliced tomato on the make line for the sandwiches. Possibly using wax pencils. Management mentioned a new counter cold holding unit that should be in place by the first of the year. Until then, please mark pans with this foods with a time for discard 4 hours from when they are removed from refrigeration.
