    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Sushi rice for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

- Dish machine needs to be tagged out until more sanitizer is obtained and the machine verified to operate correctly.
- Clean and sanitize small square white dishes that were observed with some debris in them. Store dish-ware upside down or under cover to prevent any physical contamination to the dish once it is cleaned.
- Call when the walk-in freezer is up and running for inspection (before using).
- Employee left to provide cooking thermometer during inspection. Will check back later today.

- Install soap and hand towel dispensers at all hand sinks and stock with soap and towels
- Clean and sanitize Pepsi soda gun at the bar.
- Provide sanitizer and test strips at the 3 vat sink at the bar, the 3 vat in the back kitchen, and the dish washing machine.
- Finish installing pass thru window and clean saw dust and construction debris.
- provide a way to hang the hose and all mops near the utility sink
- finish wiring and tie in loose box between the wok and the hand sink ( covered exposed wiring and secure properly)
- remove all remaining construction tools and materials and thoroughly clean.
- organize the walk-ins and store meats properly.
- Remove all bags of trash or store in an approved container
- Some drywall repairs needed in the kitchen area (holes/damage)
