    Observation: There is not handwash station at outside grill site. (See 12 VAC5-421-2280)
    Correction: Install additional lavatories to increase the employee's opportunity to wash hands routinely. Prior to installing additional plumbing fixtures the permit holder must apply and gain approval through the necessary regulatory agencies.

Reviewed cooling-Ice bath, shallow pans, uncovered on top shelf of fridge then cover after cooling to 41*F in 4 hours.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Brown chicken stew/chicken curry hot holding at improper temperatures.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. Ensure that steam table is utrned on and heated before fulling pans of food

Written health policy- added noro-virus. Air gap floor drains on ice machine, both 3 vat sinks and dish machine. All 4 hand sinks have hand washing signs, soap and paper towels. Covered trash cans in toilet rooms.
Gloves, chlorine test strips, hair nets and cooking thermometers in kitchen. Ambient air thermometers in all cold holding units. Final cleaning complete. OK to issue permit.
