Discussed the following with the person in charge:
1) Many of the issues addressed in the previous report have not been repaired/replaced by the construction company
2) EcoLab needs to do preventative maintenance on the dish machine prior to the start of the 2016-17 school year
3) Good hand washing and food prep procedures observed during the inspection
4) The facility is very clean and well maintained

  • Equipment - Good Repair and Proper Adjustment
    Observation: The following equipment was observed in a condition that prevents necessary maintenance and easy cleaning: 1) the walk-in freezer door has a build-up of ice and condensation 2) the stainless steel paneling is not caulked properly on the back-side of the cooking line 3) the mop sink drain is not properly installed therefore the water will not drain completely and the mopsink is beginning to rust 4) the tray-return counter was not properly designed to prevent excess water from running off of the counter and onto the lunch room floor area 5) the dish machine door is not properly sealed to prevent the water from seaping out onto the floor while the dish machine is running.
    Correction: Repair the following equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
  • Physical Facilities in Good Repair
    Observation: Observed a blown out light in the hood. The floor tiles throughout the kitchen are not sealed and therefore not easily cleanable. The stainless steel coving near the front serving line was missing and there were large amounts of caulking left on the wall.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Mop sink needs a flat screen to block debris from entering pipes and to allow water to exit sink.
This establishment is in substantial compliance with the Virginia state rules and regulations regarding restaurants. Therefore permit is issued.

The following must be addressed before health permit can be issued
1) All ceiling tile must be in place
2) All refrigeration turned on to obtain temperatures
3) Ware washing machine up and running to obtain temperatures
4) All tape and plastic removed from all equipment
5) Sanitizer dispenser at 3 compartment sink in working order and must have test strips
6) All flooring and coving must be finished
7) Place thermometers inside milk coolers
8) Walk in freezer needs metal threshold
9) Locker room needs flooring and coving
10) Finish wall tile in rest room
11) Cover outlet hole or place outlet in hole in restroom
12) Finish coving by mop sink
13) In manager's office install ceiling tiles, flooring, coving and window
14) Threshold at walk in cooler needs to be level
15) All sinks and/or back splash needs to be sealed to the adjoining walls
16) In dish room coving beside hand sink needs caulking between wall tile and coving
17) Fill in holes in back splash behind the scrap collector in the ware washing area
18) At least 10 foot candles of light at a distance of 30 inches above the floor in walk in refrigeration and dry storage areas
19) At least 20 foot candles of light at surface where food is provided for consumer self-service such as buffets and salad bars or where packaged foods are sold for consumption.
Inside equipment such as reach in and under counter refrigeration
At a distance of 30 inches above the floor in areas used for handwashing, warewashing, equipment and utensil storage, and in toilet rooms
20) At least 50 foot candles of light at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders or saws where employee safety is a factor.
All floors, walls, ceiling and equipment must be cleaned and sanitized before final inspection.
Must have occupancy permit in order to be issued health permit.
