Inspection conducted as an opening inspection for Plum Crazy BBQ. The above observations and the following were discussed with the person in charge: -Fresh Water Tank: 10 Gallons -Waste Water Tank: 18 Gallons -Hot Water Tank: 2.5 Gallons Service area is the vendor's home. Public water and public sewer provided. Provide a thermometer for the new reach in cooler. Food grade hose and backflow prevention device provided. Smoker was not available for inspection.

Ensure hot water reaches 100'F at the hand sink. 4. Recommend sealing ceiling panels to make them smooth and easily cleanable. The following items and questions will need to be addressed prior to an approval being issued for your mobile unit: In regards to the Application for Mobile Unit Plan Review: 1. Page 2 requests a layout of equipment (or photographs if the equipment is already installed), a copy of the proposed menu, and certification in food safety credentials if you have them. These items were not provided. If you are not certified in food safety, you must be able to pass a demonstration of knowledge test prior to the health department permit being issued. It is highly recommended that you take a food safety class if you have not previously. Class information is enclosed with this letter. 2. Page 4, you stated you will use a meat thermometer to take temperatures of foods. Please ensure you have proper thermometers. Meat thermometers are not always accurate. At least one small diameter, metal stem probe thermometer is required. It is recommended that thermometers range from 0’F to 220’F in 2-degree increments. 3. Page 5, the employee health policy description is not detailed enough. An example is included with this letter. 4. Page 5, Question 8: How will you clean multiple use sinks between uses? 5. Page 6, Section B, Question 2, regarding openable windows: it is recommended these windows have screens so they may be left open if needed. 6. Page 6, Section E, water supply: You stated the water tank inlet was not less than ¾” in diameter. This is a requirement for mobile units. Page 6, you stated the fresh water supply tank is only 10 gallons. Will this be enough water to meet the operational needs? 7. If pest control is needed inside the mobile unit, application and treatment must be completed by a certified pest control operator. It is recommended to have a contract with a commercial company to help with preventative treatments. 8. The service area vendor letter and commissary letter were both submitted blank. Will you be storing all foods on the mobile unit? Where will you fill your water tanks and dispose of waste water? Please address the above items to assist in the approval of your plans.
