The above observations and the following were discussed with the person in charge:
-Provide a new thermometer for the reach in cooler on the line.
-Move the handsoap in the back of the kitchen.
-Handout provided for backflow prevention devices.

  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: The handsinks in the restrooms are no longer sealed to adjoining equipment or walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
  • Equipment and Utensils, Air-Drying Required (repeated violation)
    Observation: The black food storage containers stored over the 3 compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Clean stainless steel pans were observed stored with the food-contact surface facing upward. Strongly recommend providing a splash guard at the handsink to prevent splash onto clean equipment.
    Correction: Store equipment and utensils covered or inverted to prevent contamination while in storage.
  • Critical: Backflow Prevention Device, When Required*
    Observation: Observed a hose attached to a faucet fixture on the mop sink. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
  • Toilet Room Receptacle Covered
    Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies restroom.
    Correction: Install a covered refuse container for the disposal of feminine napkins in the ladies restroom.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing station in the back of the kitchen. The PIC provided paper towels during the inspection.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Physical Facilities in Good Repair
    Observation: The walls under the handsinks are not maintained in good repair. Observed holes in the walls under the handsinks in the ladies restroom and in the back of the kitchen around the plumbing.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Several plastic food containers over the 3-compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the 3-compartment sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Outer Openings - Protected
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Observed several small gaps around the back door.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

The above observations and the following were discussed with the person in charge:
-Employee health policy.
-All in use utensils are being washed, rinsed and sanitized at least once every 2 hours.
-Observed a small leak under the wash basin of the 3 compartment sink.
-Observed the seal along the back door of the kitchen to have a small gap in it.
-The quaternary ammonium sanitizer in the buckets and in the 3 compartment sink was measured at 200 ppm.
Facility and all equipment observed to be very clean, great job!

    Observation: Clean stainless steel sheet pans were observed stored with the food-contact surface facing upward. The PIC flipped then pans over during the inspection.
    Correction: Store equipment and utensils covered or inverted to prevent contamination while in storage.
  • Critical: Backflow Prevention Device, When Required*
    Observation: Observed the pre-wash spray hose extend below the flood rim level of the sink basin at the 3-vat sink.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
  • Toxics - Separation of Toxics (corrected on site)
    Observation: Chemicals are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed liquid soap and liquid sanitizer stored with food on the dry storage shelves. PIC removed the chemicals and placed them in the designated area during the inspection.
    Correction: Chemicals must be separated by spacing or partitioning to prevent contamination of food, equipment, utensils, linens or single service items.
