| The above observations and the following were discussed with the person in charge: -Work orders are in to repair the ice build up along the side of the door in the walk in freezer and the dishmachine. | The above observations and the following were discussed with the person in charge: -Work orders are in place to repair the dishmachine, garbage disposal and leak in the reach in cooler. -Minimal amount of apparent ants observed on the knife block in the dry storage area. Recommend cleaning the interior of the knife block to prevent the attraction of pests. -Facility is using the food service towels meant for use in the sanitizer buckets in the bottom of food storage containers. Discontinue using these rags with food storage as they are not food grade. -Discuss date marking procedures for foods being removed from the freezer and placed in the walk in cooler to eliminate any confusion regarding discard dates. -The quaternary ammonium 146 sanitizer in the 3 compartment sink and sanitizer buckets measured at 200 ppm. Excellent handwashing procedures and gloves use observed throughout this inspection, great job by all staff members! Lots of good handwashing and glove use observed throughout the inspection, excellent job by all staff members! | The above observations and the following were discussed with the person in charge: -Work order in place to replace the blown light bulbs in the hood. -Observed ice build up on the motor of the reach in cooler. The temperature of the cooler was measured at 48'F. Foods in this cooler still maintaining a temperature of 41'F and below. PIC has a work order in place to repair this cooler. Ensure foods are not left in cooler overnight until cooler is repaired. -Observed the small ice cream freezer stored by the back door of the kitchen. PIC has a work order in place to repair this freezer. Please repair or replace. -The wash water temperature was measured at 143'F. After running the dishmachine several times to get the rinse water above 180'F, the wash water temperature had dropped to 134'F. The wash water temperature should reach a minimum of 160'F. Please have the dishmachine machine reapired prior to using to washing dishes. The quaternary ammonium 146 sanitizer in the 3 compartment sink was measured at 200 ppm. Staff members are doing an excellent job with keeping the kitchen and all equipment extremely clean, great job!
