The above observations and the following were discussed with the person in charge:
-A work order is in place to repair the dishmachine and walk in freezer.
-A work order was placed to repair the automatic sanitizer dispenser at the 3 compartment sink during the inspection.
-The walk in cooler was observed to be 40+'F during the inspection. Foods in this cooler measured at 43'F. Please monitor this cooler and/or contact the repair company to ensure foods measure at 41'F and below.
-Please replace the cereal label on the bulk container.

  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the equipment were not observed sanitized. Dishmachine was observed to be in disrepair. The quaternary ammonium sanitizer in the 3 compartment sink measured at 0 ppm. The PIC provided bleach during the inspection for the 3 compartment sink. Concentration measured at 50 ppm. Work order placed.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Vent filters in the hood system are not being maintained in a clean condition.
    Correction: Maintain hood system vent filters in a clean condition.

-Metal shavings observed along the sides of the can opener blade, replace the blade to prevent metal shavings from collecting.
-Provide a new thermometer for the homestyle reach in cooler.

    Observation: Shredded cheese (47'F) stored in the homestyle reach in cooler was observed to be cold holding at improper temperatures. The PIC placed the shredded cheese in another cooler during the inspection.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit. Observed raw shell eggs stored over fruit in the reach in cooler. PIC removed the shell eggs and placed them in the bottom drawer of the cooler during the inspection. Shell eggs are used for baking only in this facility.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the walk in cooler. Blown light bulbs observed in this cooler. Light was measured at 0 foot candles during this inspection.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

-Bleach sanitizer spray bottles for the food contact surfaces in the classrooms, handout provided.
-Recommend food safety class, handouts provided.
Please provide an invoice or documentation from the pest control company regarding the treatment for pests throughout the facility.

  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The can opener blade was observed to be dull. Observed metal shavings along the sides of the can opener blade.
    Correction: Disassemble the can opener, clean and sanitize the assembly, remove and replace the blade. Can opener blades must be kept sharp to prevent creation of metal fragments that can contaminate food in the can when opened.
  • Critical: Pests-Controlling Pests*
    Observation: Observed methods are not being used to control pests. Observed mouse droppings throughout the back of the kitchen under the shelves in the dry storage area.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.

Inspection conducted as a routine inspection for the facility changing kitchen's within the same establishment.
Recommend labeling all areas being used for the preschool with "Preschool use only" labels.
Facility approved to operate in the Rubicon facility.

No violation noted during this evaluation.
02/15/2013Routine
The above observations and the following were discussed with the person in charge:
-Raw turkey burger used to prepare sloppy joes. Procedures for preparation and cooking temperatures discussed. Discussed the use of precooked meats for this product.
-Employee health policy observed.
-Raw shell eggs are only being used to bake brownies. Ensure the shell eggs are kept on the bottom shelf of the cooler.
-Please provide additional bleach test strips. The strips provided by the PIC had become wet and will not provide an accurate reading.
-Observed a possible leak in the plumbing under the wash basin of the 3 compartment sink. Please repair as needed.
-Please contact the health department prior to changing the kitchen location. A new application will need to be filled out and another inspection will need to be conducted of the new facility.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Lighting, Intensity
    Observation: Less than 50 foot candles of light was noted in the food prep area. Observed less than 20 foot candles in the food prep area. Several blown light bulbs observed.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
