    Observation: The equipment food-contact surface of the tomato slicer was observed soiled to sight and touch. The PIC had an employee clean and sanitize the tomato slicer during the inspection.
    Correction: Clean and sanitize these surfaces for food contact.

-Can opener blade and thermometer discussed.
-Quaternary ammonium 146 sanitizer in the sanitizer buckets measured at 200 ppm.

The above observations and the following were discussed with the person in charge:
-Please provide thermometers for the following equipment: Aquafina Reach in Cooler by the prep table on the front line, prep table on the front line
-Recommend replacing the faucets at the handsink next to the dry storage room and at the handsink by the slicer. Both sinks took several minutes for the water to reach 100'F. Observed hands free faucets provided on both handsinks and the water would not stay on long enough to reach temperature. These faucets were replaced on both handsinks on the opposite side of the kitchen and hot water was obtained very quickly.
-Please obtain a small diameter probe thermometer for taking temperatures of thin meats such as hamburgers and deli meats.
The Quaternary Ammonium 146 sanitizer in the 3 compartment sink measured at 200 ppm and in the sanitizer bucket at 150 ppm.
Lots of good handwashing and glove use observed by all staff members today, great job!

    Observation: The sliced cheese (47'F) and chicken patties (47'F) in the reach in cooler were observed to be cold holding at improper temperatures. PIC removed all foods from this cooler and placed them into the walk in cooler. Reach in cooler was measured at 48'F (full) and 46'F (empty) during the inspection. PIC called in a work order on the cooler during the inspection.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: Intake and exhaust air ducts are not being cleaned. The ceiling vents next to the walk in cooler observed to be soiled.
    Correction: Clean intake and exhaust air ducts and change filters so they are not a source of contamination by dust, dirt and other materials
