Quaternary ammonia sanitizer in the 3-compartment sink measured 200 ppm.

  • Critical: Backflow Prevention Device, When Required*
    Observation: Observed the pre-wash spray hose laying in the sink basin at the 3-vat sink- no air gap existed. (The hose was taken out of the sink basin and attached to the wall hook. The maintenance personnel arrived on site to look at the hose during the inspection. They will either install a spring hose that is elevated 1 inch above the flood rim level or install a backflow prevention device on the water line.)
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

Use of dish machine high temperature recording thermometer. Ensure thermometer is "cleared out" by holding down the top left button and the bottom button until you see dashes on the screen. To read highest temperature after running through the machine, hold the top left button down for approximately 2 seconds until the reading appears. It should be at least 160'F. Today's reading was 167'F. This is recording the surface temperature, which is different than the reading on the machine's temperature gauge (temperature of the water coming through the manifold- should be 180' or higher).
