| No violative conditions were observed during this inspection. EHS discussed holding of packaged meals (prepared off-site) on the service line with the CFM and employees. Meals containing PHFs are temperature logged on delivery and stored in the walk-in refrigerator until placed on ice on the service line as needed. All such meals are purchased or discarded at the end of lunch service, which is approximately two hours. Most meals are stored on ice approximately 10 minutes.
