| Today’s inspection was to conduct a risk factor assessment. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment. Additional temperatures: -cut catelope (39F) in 2dr reach-in cooler by storage -cooked corn and bean mix (35F), grilled chicken (22F) in walk-in cooler EHS provided additional training and written instructions on: -Date marking. **Please pre-cool prepared salad package and wrapped sandwiches with potentially hazardous foods to 41F before putting them out on the line. Please observe temperature of these items after lunch hours to see how elevated temperatures are for these items and take appropriate actions. **Please train staff on date marking. 7 days include date prepared. Please review written instruction provided. **Please consider installing hand sink at the wall, approximately located at the middle of the kitchen. Two hand sinks located at the far ends are not easily accessible to staff cooking and serving in this kitchen. It has been a pleasure to serve you today.
