Observation: The nonfood contact surface of the inside bottoms of the double stack ovens has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Hood vents were drawing air (paper towels used to test) but the fans (s) were not making much noise and I suggested having maintenance check the system out, since there was a problem with the hoods at the previous inspection.

Correction: Repair the compressor to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the compressor, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: Walk-in freezer compressor / fan was observed in a state of disrepair and damaged. It is making a loud clanging noise like fan bleades hitting something solid, (temperature of the freezer is fine)
Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
