Observation: Vent hood observe build up in need of services. Grease/Condensation is noted to be accumulating on the walls/ceiling at the (unit in the kitchen). This appears to be due to insufficient ventilation of the hood system.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
