No critical violations. However, sliced steak was found at 49 F. This had just been sliced. You have 4 hours to cool to 41 F. PIC placed into freezer. Make tables should not be used for cooling foods. Sandwich papers found under handtowel dispenser. This is a poor location for these because they become contaminated with water from hands when grabbing towels. PIC relocated them. Bug light cannot be over food equipment or tables. I recommend relocating unit. Soups are being cooled on site in tied up bags using an ice bath. As long as soups are used within 48 hours a HACCP plan is not required. Observation: Floor under 3 part sink is not smooth and easily cleanable. The grease interceptor is installed below grade and the tiles around the interceptor are not sealed around the edges of the interceptor. Water, soil and food can get under the floor tiles and will pool on top of the interceptor.
Correction: Repair or replace floor in this area to make it smooth and easily cleanable.
10-09-2014 - Tile around the grease interceptor has been sealed. The cover of the interceptor is below grade and will be difficult to keep clean and dry. The PIC states that staff plan to use a shop vac to remove standing water at the end of each day and more often if necessary. The floor is cleaned by mopping (no hose application of water).
