Refrigerator that holds dressings and half & half was a little warm, have it looked at.

Observation: Observed employee cleaning then go to the line to work without washing hands.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Observation: Observed employee putting fries into containers and the fries were touching the employees hands when filling it and setting it off to the side.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands. Recommend using a glove for the employee's hand holding the fries..

Observation: Observed the gaskets to several refrigeration units in need of cleaning,and the insides of the chicken freezer, burger freezer, the microwaves (top part), and the floors in the walk-ins in need of cleaning.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Sanitizing solution in buckets <150 ppm Quat.
Correction: Empty out buckets and make sure sanitizing concentration is at appropriate levels

Observation: Utensils on the clean rack by 3 compartment sink were soiled and the container they were in was soiled as well.
Correction: Clean the container and the utensils thoroughly to ensure no debris is left on them. Monitor dishes regularly to ensure this being done.
