    Observation: In-use utensils improperly stored between use. Observed plastic bowl used as scoop for spice. Also bowl was stored inside product.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.

Today visit was due to a complaint concerning an under cooked pancake. The shift manager described in detail how the pancake batter was made. They use pasteurized eggs in the flour, not shelled eggs.

    Observation: Observed an employee mopping the floor with gloved hands then immediately return to the line to flip pancakes without changing gloves and washing hands.
    Correction: Corrected by instructing employee to leave.

    Observation: Observed white gravy at 117°F in a 4 inch container and wrapped in the walk-in cooler.
    Correction: Gravy was put in an ice bath.

    Observation: Observed pieces of turkey in the prep unit at 51°F. The thermometer in the unit was reading 52°F.
    Correction: Product was discarded by management. Refrigerator door does not stay closed if closed hard.

Inspection made in response to customer complaint that on 1/12/13 customer found a "beetle" cooked into the food. Spoke with employee who spoke with the complainant and her mother on phone. The object described as an insect was found inside a commercially prepared dessert xangus - banana strawberry cheesecake burrito. The object was inside the product.
