Observation: Observed food on the salad bar over 41 degrees (Greens & Fruits sides).
Correction: Moved food to chiller to cool down below 41 degrees. Have maintenance check the unit to make sure it is running properly.

Observation: Observed the gasket of the right door on the pizza unit was torn.
Correction: Replace gasket.

Observation: Observed the outsides of the fryers, the tops of the ovens, and the insides of the warmers are in need of cleaning. The shelves in the fried chicken area could also use some cleaning.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Physical Facilities in Good Repair
Observation: Observed a couple hood filters that were broken/had gaps in them and a light in the hood vent was out (Pizza Station).
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observation: Observed the floors in need of cleaning in the kitchen, on the serving line, the prep area, and the chef's case.
Correction: Clean floors regularly to prevent build-up of food debris, trash, and grease/dust. Be sure to get under and behind the equipment.

Observation: Observed 2 sides of the salad bar were over 41 degrees.
Correction: Food removed and blast chilled below 41 degrees and replenished salad bar. this is done multiple time a day. Maintenance request was placed and will be fixed today.

Observation: Several sheet pans were soiled.
Correction: Go through and clean pans. Make sure all dishes are cleaned thoroughly before storing.

Observation: Hand sink in the front is very loose, and faucet at back three compartment sink has a leak.
Correction: Repair the leak and fix the faucet so that it stays in place.

Hand sink was dry again in the salad bar prep area. Employee stated that she washed them everywhere indicating that she would use the food prep sink and the 3 compartment sink. Training must be done on hand washing.
