    Observation: Observed the floor of the walk-in freezer in need of cleaning, the dish rack in need of cleaning, and several refrigerations units that need cleaning on the inside.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Observed several dishes wet stacked and not able to drain.
    Correction: Let dishes air dry completely or stack them so they can drain water.

    Observation: Observed a leak at the mop sink.
    Correction: Have leak repaired.

    Correction: Pull out equipment and clean behind them thoroughly.

NOTE: Watch cooling sausage gravy - a deep container of hot gravy was found covered and placed in the bottom of the line reach in cooler (with hot cakes). Recommend leaving container uncovered, using shallow pans, and/or ice bath to rapidly cool.

Need a new thermometer in the fridge under the orange juice maker.

    Observation: Dishes in the clean rack were found soiled with food and label residue.
    Correction: Go through dishes and clean dirty dishes. Make sure that the dishes are being cleaned thoroughy.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (repeated violation)
    Observation: Gaskets/seals of refrigeration units are dirty and have accumulation of mold on them.
    Correction: Clean gaskets thoroughly and routinely.
  • Equipment - Non-Food Contact Surfaces and Utensils
    Observation: Mold build up in ice machine.
    Correction: Empty out ice machine and clean/sanitize it thoroughly. Set up a routine for cleaning this regularly.

    Observation: No paper towels were at the back hand sink.
    Correction: Make sure paper towels are stocked at each hand sink.

    Observation: Observed accumulation of debris on floors of walk-in refrigerators (Fridge and Freezer).
    Correction: Clean the floors of the walk-in coolers regularly. Be sure to clean under the racks.

    Observation: Observed drain flies in the facility, several under the sink by the salad prep.
    Correction: Contact pest control and have them deal with the problem. Cleaning of drains routinely will help prevent drain flies.

Note: Cup used as ice scoop at drive thru. Creamer tubes extend beyond one inch. Employee with bracelets on the make line.
Good glove use and handwashing observed. Good time marking.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed above 41F: canadian bacon 48F, burrito mix 48F (in bottom of reach in at line).
    Correction: Unit air temperature in top portion is 36F, air in bottom is 48F. A layler of hot cakes on the middle shelf is completely blocking air flow in the unit. Do not overstock shelves to block air flow. Product discarded.

    Observation: Upper freezer at fryers is iced over.
    Correction: Defrost. Check door seals.

    Observation: Bulk milk (creamer) tube extends beyond one inch.
    Correction: Cut tube no more than one inch from bag base at a 45F angle.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed in need of cleaning: fryer sides, refrigerator door gaskets, ice chute and underside of soda dispensers at self-serve.
    Correction: Clean.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors at grill and in walk-ins need cleaning.
    Correction: Clean regularly.
09/30/2013Routine
No risk factor violations noted at the time of inspection. Note: grill employee observed pulling up pants/touching clothes with gloved hands. Even though he is not directly handling RTE foods, it is still a bad practice. Back handsink is slow to drain. Watch cafe refrigerators (two with milk tube/bag preventing proper closure). Good handwashing and blue glove use.
No violation noted during this evaluation.
03/27/2013Risk Factor
Complaint: no hot water 12/5/12. I spoke with manager. Wednesday, hot water went out. Heater was restarted then went out again right before close and could not be restarted. Facility was closed Wednesday night and has been closed since. The part is here to fix the water but the circuit board is out but will be fixed tomorrow mid-day. Once the hot water has been restored, ok to reopen.
No violation noted during this evaluation.
