Observed manager wash hands and encourage employee to wash hands during inspection. Ensure proper glove use and good handwashing is discussed with employees who handle raw beef. Sanitizer needs to be adjusted (>500ppm).

    Observation: Observed an employee touch containers of hamburgers in the hot holding area with the same gloves that she had been just using to place raw hamburger patties on the grill.
    Correction: Discussed proper practices with manager. Use only cleaned and sanitized utensils or equipment during food preparation.
  • Critical: Toxics - Conditions of Use*
    Observation: Sanitizer at the 3-compartment sink is >500 ppm (quat).
    Correction: Contact service company to calibrate sanitizer dispenser. Recommend diluting sanitizer concentration with water until the system is re-calibrated.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Correction: Remove the harborage material (liquid) and eliminate insects.

    Correction: Clean.
