    Observation: Observed the mixer, the dough rounder, and the clean sauce bottles still soiled. Also observed the baking pans were heavily encrusted with grease.
    Correction: Clean equipment and dishes thoroughly after use. Work to scrub off the grease build-up on baking pans.

    Observation: Observed the speed racks and the metal wire racks were in need of cleaning.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
