Discussed observations with person in charge. 12 VAC 5-421-820, "Potentially hazardous foods that are held cold must be held below 41 degrees Fahrenheit. 12 VAC 5-421-1450, " Cold holding equipment must be capable of maintaining potentially hazardous foods below 41 degrees Fahrenheit. It is not acceptable for refrigeration unit to go out of temperature due to usage.

    Observation: Milk cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Cooling, Heating, and Holding Capacities (corrected on site)
    Observation: Reach in refrigerator is not maintaining potentially hazardous foods 41°F or below. (temperature was at 40 F upon completion of inspection)
    Correction: Repair or replace the refrigerator to ensure food items are held at the proper cold holding temperature of 41°F or below . Improper food storage temperatures are a major contributing factor to foodborne illness.
