Refrigerated prep unit was being used for potentially hazardous foods and holding foods in the temperature danger zone. While EHS was present, owner and service technician were contacted. Both arrived prior ro my leaving. Food in the temperature danger zone was discarded. Thermometer was put in unit during inspection.

    Observation: There was no knowledgeable person in charge or certified food manager present.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.

    Observation: Potentially hazardous food in bottom and on top of refrigerated prep unit is cold holding at improper temperatures.

    Observation: Refrigerated prep unit is not maintaining potentially hazardous foods 41°F or below.
    Correction: Repair or replace to ensure food items are held at the proper cold holding temperature of 41°F or below . Improper food storage temperatures are a major contributing factor to foodborne illness.
  • Equipment - Cutting Surfaces (repeated violation)
    Observation: The cutting board(s) along the prep table is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

There is no certified food manager present and no proof of certified food manager available at restaurant. Refrigerated prep unit is not holding potentially hazardous foods at safe temperature. Operator moved them to walk-in refrigerator. Advised not to use until it can consistently hold PHF at or below 41 degrees F. Follow-up inspection will be made. Need to keep thermometer in unit. Advised to have certificate of CFM available at follow-up inspection. Advised to discontinue practice of dipping mixing wand into sanitizer solution between making drinks. Sanitizer is to be used after washing and rinsing utensils. Please call when refrigerator is holding at safe temperatures. Health department permit was issued.

    Observation: Surfaces of the interior of ice machine were observed soiled.
    Correction: Clean the surface at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Containers of cleaning chemicals are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.

    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Food stored in a location where it is subject to splash, dust or other contamination. Top rack of bagels in walk-in is not covered.
    Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
