Dirty boxes in storage room needs to be discarded immediately to prevent attracting flies.All cold holding equipment in need of defrosting and cleaning. Buffet line set-up at 10:30 AM. Spoke with owner who states she will dispose of items by 1 PM. Asked her to move colder items to higher heat and add more hot water to the unit. Stir items more frequently. Reheat items to maintain temperature. Roast pork left on fryer unit 120 degrees F at 10:30 AM. If used, must be used within 4 hours and reheated to 165 degrees F.Raw beef by RTE. CDI. Clean bathroom and bottom of fridge unit. Roast pork is being cooled and will be placed in fridge. Buffet items are being reheated.
