Ensure the grease filters for the hoods are tightly placed together to prevent space between each filter,this was observed during the inspection. Grease was observed dumped in the outside Dumpster, recommend using the appropriate channel for disposition of cooking grease.

    Observation: The dry storage are had a drain that was backed up leading to accumulation of water and exposure of food items to possible splash.
    Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.Work order was put in for immediate repair of drainage.

    Observation: The splash guard between the hand sink and tea maker was observed in a state of disrepair and damaged.

If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
