    Correction: The permit holder shall designate a person in charge who is authorized to monitor and manage all food establishment operations and who is authorized to take actions to ensure that the Regulations' objectives are fulfilled. Certificate should be present at the store showing date of certification and expiration.

    Observation: There was no temperature measuring device located in the colding holding equipment..
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: Taquitoes, hot dogs, sausages, and breakfast bites classified as ready-to-eat (RTE) taken from a commercially processed, hermetically sealed container, or from an intact packaged purchased from a food processing plant, was not reheated to the proper temperature for hot holding.
    Correction: Reheat commercially processed RTE food for hot holding to 135°F or above.
