New items: Facility using time as control for buffet. A written policy is present, but a recording of temperatures is not being accomplished. Recommend using temperature charts to note temperature of PHFs when setting up bar at 11 AM, 2 PM, 4 PM, and 8 PM. Cold items have time stamps, hot items do not. Recommend time stamping hot hold items as well as cold.
