No critical violations noted. Observation: the front desk area is being renovated. Plastic tarps have been placed to the ceiling to provide a barrier from the dining room/food display area. Permit issued

    Observation: Observed construction crew going into the kitchen to access the other side of facility.
    Correction: No persons other than kitchen staff are allowed in the kitchen.
  • Food Storage - Clean and Dry Location
    Observation: Observed a bag of sugar on the kitchen flooring.
    Correction: Store all foods at least 6" off of floor.

  • Food - Condiments - Protection
    Observation: Condiments are not stored or dispensed in a manner to prevent contamination. Shredded cheese and salsa are in open containers for customer self service.
    Correction: Protect condiments by keeping them in dispensers that are designed to provide protection, protected food displays with proper utensils, in their original containers that are designed for dispensing or in individual packages or portions.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: TCS food held >42°F and not on time control. Single serve butter 51°F and Philly Cream Cheese 49°F. The container is designed to be frozen prior to use but was not cold at the time of this inspection.
    Correction: Make sure the contain is frozen before butter and cream cheese are placed in it. If you find that the container wasn't put in the freezer before you need to use it, just put a few packages of butter and cream cheese out at a time and discard packages that aren't used. PIC agreed to discard these TCS foods that were not held <42°F.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (repeated violation)
    Observation: Interior of reach in lowboy cooler is not clean. Fan guards and equipment (fan?) added to interior with accordion folded attachment have build up of soil/mildew.
    Correction: Clean interior of cooler.
  • Equipment - Non-Food Contact Surfaces and Utensils
    Observation: Ice machine interior and can opener not clean.
    Correction: Clean these items.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floor drain by ice machine is not clean.
    Correction: Clean drain.
