    Observation: Observed tiles loose behind the oven and roaches are harboring there. Also, the walk-in cooler floor is buckling and is no longer smooth and easily cleanable. The grout is low in several areas of the kitchen.

Note: the hand sink was dry at the beginning of the inspection. Manager on duty did not seem to understand time control and that there were labels with time on them.
  • Food - Packaged and Unpackaged - Separation, Packaging, and Segregation
    Observation: Observed unwrapped cheese stored in the bottom of the dirty sandwich prep unit.
    Correction: Cheese should be wrapped or stored in a clean covered container.
  • Utensils - In-Use - Between-Use Storage
    Observation: Observed an employee dragging a cup through the ice to dispense the ice.
    Correction: Use scoop with handle.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed sliced ham in a container on top of the microwave oven at 58°F. The sliced tomatoes were at 52°F on the prep line. Time control was not being used. Also, the chicken tenders and wash were at 44-48°F.
    Correction: Chicken tenders and wash had ice added and the ham was also iced down.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: Observed a container of chili uncovered and not date labeled and at 45 °F in the walk-in cooler.
    Correction: Product must be cooled, labeled and covered.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed splattered food debris in the microwave oven, a build-up of ice in the French fry freezer and old spillages behind equipment that are on counters. Also, the rolling cart was filthy.
    Correction: Clean.

    Observation: Observed the grease dumpster with the lid open and overflowing. Grease was on the ground and going into the storm sewer.
    Correction: Keep lid closed. Clean area.
