Discussed the following with the manager on duty: (1) Employee health policies, (2) Food sources, (3) Allergens, and (4) Updated manager certification classes.
Critical: Eating, Drinking, or Using Tobacco* (corrected on site) Observation: Open and uncovered drinks were observed in the front prep area and the dough preparation area.
Correction: All drinks must be in the designated break area away from food preparation/handling areas to prevent cross contamination.
Food Storage - Clean and Dry Location Observation: An open bag of nonfat powdered milked was observed on the floor..
Correction: Discussed with the manager on duty moving the bag to a place where it is not exposed to splash, dust, or other contamination to prevent contamination.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation) Observation: Several food items were observed at improper cold holding temperature: chicken salad - 44F and tomatoes - 47F. These food items are being stored in the walk-in cooler and being brought out to the front to prepare sandwiches upon order because the sandwich preparation unit is not functional.
Correction: The manager on duty agreed to use time as a control for the food items until the sandwich prep unit is replaced. The foods will be marked with a discard time that does not exceed 4 hours from time the foods exceed 41F.

Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Potentially hazardous food in sandwich prep unit cold holding at improper temperatures. Internal product temperature measured 45-46 F (foods cold holding < 4 hours).
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Note: Operator to clean coils on unit.. If temperature does not stabilize, a service will be made.

Discussed employee health policy, monitoring equipment and food temperatures, cleaning & sanitizing procedures and prevention of bare hand contact of ready-to-eat foods.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Curry chicken salad (54 F) & sliced tomatoes (54 F) cold holding at improper temperatures.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Sandwich preparation unit was measured operating at 50 F +. Owner was present and voluntarily removed & discarded potentially hazardous foods (TCS foods) that had been in this unit more than 4 hours. Owner readjusted unit thermostat to run more cold and will verify operation at 41 F (will preform maintenance as needed).
