Observation: The ambient (air/water) temperature measuring device (degrees F) located in the 1 door unit is not accurate. Theramometer is broken.
Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

Observation: Water heater observed turned off or not set at the proper temperature. Operator did not turn on hot water before operating at the time of the inspection not hot water available.
Correction: Ensure that water heater is turned on and set at proper operating temperature. Operator turned the hot water on and verified hot water is available during the inspection. Operator to have hot water before food handling occurs on the unit.

Piping had been replaced and water was running with hot water from heater. Operator pre-preps/cools 5 gallon tubs of batter with raw shell eggs in commissary. Holds cold on unit in commercial refrigerator. Fills and replaces hopper with new one every 4 hours.Operator trains and monitors staff to ensure regular handwashing/glove us with RTE foods and cleans/sanitizes surfaces regulary. - Hand Drying Provision
Observation: No disposable towels were provided at the hand washing lavatory in the unit--operator needs a towel dispenser
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
- Physical Facilities in Good Repair
Observation: Screening rusty and needs replacement--it is not maintained in good repair. Floor in unit is rough and not cleanable-operator will repaint floor and all shelving units.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
