    Observation: The commercially processed ready-to-eat (RTE) Milk in the refrigeration unit was not discarded by the ""consume by"" date. Observed a container of milk with a discard date of November 28, 2015.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent
    Observation: The nonfood contact surface of the Wood shelving is not corrosion resistant, nonabsorbent, and/or smooth. Observed Peeling and Chipping paint on the shelving.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Observed a concentration of less than 10ppm in the dishmachine.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

    Observation: The handwash station at the kitchen facility is being used for purposes other than washing hands. Observed coffee cup being stored in sink.

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands. Observed Employee serving fish patties and fries with bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use. Observed wet wiping cloths being stored on hand cart.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Warewashing - Manual Warewashing, Sink Compartment Requirements (corrected on site)
    Observation: Employees are using an alternative manual warewashing method that has not been approved by the health department. Observed Employee using the washing compartment of the three compartment sink to wash and sanitizer plates, then rinse the plates in the rinse compartment, then place on a drying rack.
    Correction: Discontinue use of this alternate warewashing method until it can be reviewed and approved by the regulatory authority.

    Correction: Utilize only Chlorine Bleach that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces
