The purpose of today's visit was to conduct a risk factor assessment inspection. Observed the facility clean and organized. CFM is knowledgeable.

The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. Observed active managerial control systems in place: a designated employee drink area separate from food and food contact surfaces and proper thawing of frozen menu items in the refrigerator.

The purpose of today's visit was to conduct a risk factor assessment. Hot holding was unable to be assessed as food for today's meal service was in the process of reheating during the inspection. All violations were corrected during the inspection. Thank you!
  • Handwashing Signage at Handwashing Facilities Required (corrected on site)
    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at the handwashing sink in the kitchen.
    Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands.
  • Critical: Conditions of Use/Presence & Use of Toxics Per Law (corrected on site)
    Observation: Observed the chlorine sanitizer in excess of 200ppm.
    Correction: Poisonous and toxic materials shall be used according to law and per the manufacturer's directions to prevent injury and contamination. Use chlorine sanitizer at 50-200ppm. Use your test strips to verify proper concentraion. NOTE: Sanitizer solution was replaced during the inspection.

  • Food Storage / Preventing Contamination
    Observation: Observed food boxes stored on the floor of the walk-in freezer.
    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
