The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. EHS observed the following good active managerial control practices in place per corporate standards: cold and hot holding temperature logs, verification temperature check of final cooling temperature in the morning and educational food safety information posted. Note to all manager's and staff, please remember to properly clean and sanitize the food temperature before and after taking food temperatures. Also it is recommended that the evening crew take temperatures of cooling carryover product to verify that product is cooling from 135F to 70F within two hours and then to 41F in the remaining time not to exceed a total of six hours. Please be reminded that the first stage of cooling from 135 to 70F cannot exceed two hours and the only way to verify this is to take temperatures during the evening shift (morning temperature checks do not verify the first stage of cooling). EHS provided CFM the following handouts: CFM card guidelines, cooling log in English and Spanish and Employee Health handouts in Spanish (as future reference).

The purpose of today's visit was to conduct a routine inspection. Within 10 business days obtain Northern VA Food Manager photo identification card and fax a copy to Fax number 703-653-9448 and address the fax with you facility name and address to ATTN: Area E-4 EHS. Manager indicated that she knew the location to obtain the card. NOTES: Water Heater: AO Smith, DVE 80 916, 18kW - at upstairs storage room 3-vat sink: observed with 100 ppm chlorine.

The purpose of today's visit was to conduct a complaint inspection. Complainant was at facility on January 9, 2013 and observed an employee handling money and then prepare food wearing the same pair of gloves. Complaint is not confirmed. While this was not observed today, one employee was cashier and other two employees were preparing food, the CFM was able to discuss proper glove and handwashing policy. He was reminded that all employees must take off gloves and wash hands before putting on a new pair of gloves and handling food. This is the third time that a manager has been found without a Northern VA Food Manager photo identification card within the past 12 months. In order to prevent further enforcement action, you must provide a copy of your card within the next 10 days. Please fax or e-mail a copy of your card to me by January 25, 2013.
