The purpose of today's visit was to conduct a routine inspection. EHS observed the following good active managerial control (ACM) practices: designated drink area which includes shelving with plenty of space for multiple employees. Drink cups are labelled with employee name and include lids and straws. Another good ACM practice is thawing inside of refrigerators and employees are assigned and designated to a work station. No critical violations were observed. Please correct all of the non-critical violations no later than 90 calendar days. EHS observed several open and empty coffee creamers packages on top of the fountain drink boxes in the dry storage area. This appears to be employee trash, either way please clean the dry storage area thoroughly.
- Food Storage / Preventing Contamination
Observation: Food stored on the floor and/or food stored less than 6 inches off the floor.------Observed box of wonton packages and box of biscuit mix stored on floor.
Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
- Equipment / Good Repair / Components / Gaskets (repeated violation)
Observation: The door gaskets of the following unit(s) are torn:
1) Traulsen 2DR front cooler,
2) Traulsen 1DR upright freezer.
Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
- Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation (repeated violation)
Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris:
1) Inside of coolers,
2) Gaskets of coolers,
3) Floor under dry storage shelving.
Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Observation: The sink basin at the back handsink is slow to drain.
Correction: A plumbing system shall be maintained in good repair.
- Light Bulbs / Locations where Shielding is Required
Observation: Light bulb(s) in the following locations are not covered by a protective shielding:
1) Above main food prep area,
2) Above back food prep area/ three compartent sink.
Correction: Provide light bulbs that are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, linens, or unwrapped single-service and single-use articles.
- Handwashing Signage at Handwashing Facilities Required (corrected on site)
Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at front handwashing sink used by food employees.
Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands. PROVIDED EXTRA SIGN TO MANAGER.

Observation: Observed the handsink by the frying stations is being used as a dump station.
Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.

Facility has training programs in place, employees were all observed washing hands as needed, using separate distinct gloves for persons handling raw chicken and had an employee health plan in place. Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
Correction: A complete employee health policy must have the following elements:
1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
