The purpose of today's visit was to conduct a routine inspection.
  • Equipment / Good Repair / Operation (corrected on site)
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: -----------Beverage Air 1DR undercounter cooler observed holding at 48F.
    Correction: CFM will not use the unit to store potentially hazardous foods.
  • Single-Service & Single-Use, Displayed & Dispensed / Prevent Contamination (corrected on site)
    Observation: Sample spoons were found handled, displayed or dispensed with the food or lip-contact surface facing upward.
    Correction: Single-service items and cleaned/sanitized utensils shall be handled, displayed, and dispensed so that contamination of food and lip contact surfaces are prevented.

The purpose of this visit was to conduct a routine inspection. Environmental health specialist provided additional handsigns.
  • Sanitizer Test Kit Required (repeated violation)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a BLEACH test kit.
  • Equipment / Non-food Contact / Visibly Clean
    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: gaskets on refrigerator and freezer located by the three vat sink and floors in the warewashing area.
    Correction: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris to maintain a sanitary work environment and prevent pest attraction.
  • Physical Facilities Good Repair
    Observation: Observed that the faucet at the three vat sink is leaking and is not maintained in good repair.
    Correction: Repair or replace the faucet so that is does not compromise the functionality of the three compartment sink.

Obtain a sanitizer test kit for Bleach.

07/24/2014Routine
The purpose of today's visit was to conduct a routine inspection.
Facility occasionally cooks meats to showcase commercial products sold in store, cooks to showcase appliances, sample commercial products and holds cooking classes.
No CFM was present today, no cooking was being done. Samples of oil oils were available. Single service little cups are being used, bread is sliced with gloved hands.
Manager was familiar with written employee health policy, its suggested that this information be reviewed with all staff yearly at a minimum. Thank you.
