Observation: Observed hummus cups cold holding at improper temperatures in the display/ grab and go cooler. Observed hummus cup in front row at 48 F. PIC stated these had been in the unit overnight. Thermometer in front/ top of unit observed at 54 F and thermometer in rear of unit observed at 21 F.
Correction: Recommend discarding the food and ensuring that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Discussed options for cold holding TCS (time temperature controlled for safety) foods in this unit (hummus only), including using 4 hour time control.

Observation: A review of the menu with the foodservice operator indicates that there is no consumer advisory for the eggs that may be served raw and/or undercooked
Correction: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish is served or sold raw or undercooked the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder using brochures, deli case or menu advisories, label statements, table tents, placards, or other effective written means.

Observation: The temperature measuring device for the (wash/rinse/sanitizing) tank of the warewashing machine is not working properly (no rins temp shown just P2 code - dish tape shows temp > 180 degrees.
Correction: Provide a functioning temperature measuring device at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.

Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
