Some food debris build up between the gasket on the meat freezer. Management said the gasket material is being replaced. For now, have staff remove the food debris and maintain it until new pieces are installed.

    Observation: Tomatoes for which time rather than temperature is being used as a control was not cooked, served or discarded by the expiration time as indicated on the package.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control.

- Monitor walk-in, some food temperatures were 42 degrees. May be a defrost cycle or may need adjusted down. Check food temperatures later tonight and verify food is 41 degrees or lower.
- Determine how many sliced tomato pans are needed that were staged under the prep station. If not refrigerated, need to be time stamped with a 4 hour discard time.
  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation after engaging in any activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
