Discussed a follow up inspection with the EHS assigned the facility, to be conducted on or about 9-27-13.
- Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation*
Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Raw chicken stored beside cucumbers.
Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. Operator discarded both products voluntarily during the inspection. Discussed providing different coolers for bringing products to a site for both RTE foods and raw animal foods and separating different raw animal foods from each other.
- Critical: Food - Potentially Hazardous Food - Cold Holding*
Observation: BBQ and other prepared foods cold holding at improper temperatures. Refrigerator ready 50 degrees food temperatures were measured at 45.
Correction: Had the operator lower the temperatures during the inspection and ensure proper temperatures are maintained in the unit.
- Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent
Observation: The nonfood contact surface of the stand for the stove is not corrosion resistant, nonabsorbent, and/or smooth. Bare wood used.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Seal bare wood.
- Sanitizing Solutions, Testing Devices
Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Critical: Handwashing Lavatory*
Observation: There are not an adequate number of handwashing lavatories on site. (See 12 VAC5-421-2280) Operator did not have a connection for the handsink to run.
Correction: Install additional lavatories to increase the employee's opportunity to wash hands routinely. Prior to installing additional plumbing fixtures the permit holder must apply and gain approval through the necessary regulatory agencies. Had the operator set up a temporary handsink outside so the could operate for the event. Ensure all connections and power is provided so the unit can operate the way it was permitted.
