3-304.11 Prevent the contact of food with non-food contact surfaces, or, with food contact surfaces that are not properly cleaned and sanitized./ Large slicer stored not clean./ COS large slicer was WRS during inspection / abated.
4-601.11 Clean shelves and bottoms of refrigerator and freezer.
4-601.11 Clean tops of stoves and inside ovens.
4-501.112 Provide hot water for sanitization in dish machine at 180 -194 F at the manifold.
The sanitization gauge was registering 0 F. A mini/max thermometer was ran in the dishmachine. The max water temperature was 167F.
4-204.115 Repair temperature gauge for sanitizing rinse on dish machine.

A sign was posted which read Teds will be closed on Monday, January 2, 2012 for New Years. The FSE had a thermometer which was calibrated during the inspection.

A stock pot of cornbread mixture stored on the floor. COS food mixture relocated.

Styrofoam cup stored in flour container in storage.

4-602.12 Clean food contact cooking and baking equipment at least every 24 hours.

Clean the floors under and between equipment.
Clean the ceiling tiles in needed areas in the kitchen and the employee toilet room.
