Honorable mention should go to Chief Brody vs. Bruce the shark in JAWS.
Female vs. male: Sarah Connor vs. The Terminator, in both T1 & T2.
Female vs. female: Ellen Ripley vs. the alien queen in ALIENS. It's not only a great fight scene, but the culmination of a wonderful character arc for the heroine. Pitch perfect brilliant.
