Perfect timing! These recipes are just what I needed! I have three LARGE zucchinis in my fridge. A friend had a bunch to give away from his garden. YUM YUM YUM!!!!

Horray, work is picking up again. The last two weeks have been dead. Kinda scary--very few sales. But the last couple of days things are looking up. That's good news for making money but it also means less time here. Oh well, ya gotta do what ya gotta do!

I am telling ya if you bake this pie and don't tell him it has zuke it until after he would never know. My oldest hated zuke until he tried this pie plus a few other picky eaters that use to hang around here with him.

Tell him he really, really needs his veggies to keep his strength for all the manly jobs he is doing. You know how to work it girl I have faith in your ability to get it done.

Ok, the zucchini and carrot patties were pretty good. The zucchini brownies were just ok, and the zucchini muffins were a little dry. That's what happens when you try to do all healthy at the same time. I still like the Italian breaded and oven fried zukes the best. I'll be making those for lunch.

Jaxson- I don't know if Mike will eat that. I think he just likes looking at the zuke plant because he is amazed at how big they get.

Thanks for the info. Never heard of it!

Here's the zucchini bread recipe. I'm awfully glad you folks can't see my recipe card - it's really old and quite stained from spilling stuff on it while cooking! Anyway, since it is old, it's not the healthiest recipe either, but it's very good. Let me know if you try it and what you think, ok?

3 eggs
2 cups zucchini, grated raw including skin and seeds (measure loosely - don't press down)
1 cup cooking oil
2 cups sugar
3 cups flour (no need to sift)
1 cup chopped nuts
18 oz. can crushed pineapple, drained
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda

beat eggs till fluffy. Add sugar and beat well. Add oil and zucchini. Next, add dry ingredients and mix well. Add nuts and pineapple, mix well. Bake at 325 degrees for 45 to 60 min. in 2 greased breadpans.

Yum, that sounds delicious! I can honestly say I have not had the privilege of bean curd with canned milk. <urp>

We had a strange dish at the gathering yesterday. Someone made fried potatoes with zucchini in it. And it was surprisingly good. I don't know if it was fried, but the potatoes appeared to be browned.

I love that rice with cheese and broccoli dish that someone always seems to bring to a potluck.
