As long as I have baked ham and scalloped potatoes I am good to go with my family. All the rest of the food is just bonuses to them.

Well dh is working Easter Sunday, so I came up with this great idea about flying up to surprise the kids for a few days which included Easter Sunday. Surprise mom--they all made plans. Of course they said they would cancel, but I said definitely not, that would have been something my mother's generation would have expected & I just don't buy into that.

Since we hate going out to eat on holidays, I think I will pick up a ham, kielbasy and make red cabbage, mashed potatoes, fresh asparagus.

Stuffed shells, meatballs, antipasto & crusty bread for desert.

Roast Easter Bunny, no kidding.

There are a lot of good recipes for rabbit and it is pretty inexpensive. It is even more inexpensive if you raise the critters.

I thought about switching it up this Easter, and doing it pure Italian style. Not sure what will be on the menu, but I love lamb. I've also learned how to make the Sicilian Easter bread with the eggs in it, so that will def. be on the menu as well.
