  • Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. CAN AND BROOMS BLOCKING SINK NEXT TO SOFT SERVE MACHINE.
  • Intermediate - Handwash sink used for purposes other than handwashing. OBSERVED MANAGER USE SINK TO PUT WATER INTO CONTAINER WITH CHEESE SAUCE. SAME SINK WAS USED TO THAW OUT SAME CHEESE SAUCE.

Chili cooked 8-12:30 pm, placed in walk in cooler was 62 in the middle, 59 on the ends. Iced container was melted. Manager also verified temperature at 62 degrees, told me thermometer was calibrated 4/11/11.
  • Multiuse food-contact surface not smooth, free of breaks/cracks/chips/pits/crevices. Glass case at warming unit at chicken nuggets broken .
  • Observed employee with no hair restraint. Managers assisting on the line with food.
  • Critical - Person in charge failed to insure that employees properly reheat the cooked chili cooked 4/11/12. Employee was asked what temperature the chili should be reheated to he responded, I don't know, the stove should do the work'.
